Es un aprendiz rockero que prefiere los clásicos versionados.
¿En qué momento concreto de tu vida supiste que querías ser Maestro Chocolatero?
Eso no ocurrió en un momento concreto y puntual de mi vida. Fui poco a poco tomando ese camino casi sin darme cuenta. A los 16 años comencé en bombones Santa Oliva.
Yo era muy joven y trabajaba desde lo más bajo.
Fue más tarde, realmente, cuando entré a trabajar bajo las órdenes del maestro Antonio Escribà, un gran maestro chocolatero, cuando descubrí que realmente podría ser de ese trabajo una pasión y de esa pasión un trabajo.
¿Qué es lo que más te gusta de tu trabajo?
Lo que me hace disfrutar es la creatividad. El chocolate y la pastelería me permiten ser creativo, dibujar de alguna manera como van a resultar esas nuevas recetas y jugar con las elaboraciones siempre respetando esas bases de la pastelería.

Es una pasión, un medio de vida y una herramienta magnífica.
¿Qué debe tener el chocolate del futuro? ¿Y qué no debe tener?
El chocolate del futuro debería de estar más cerca del chocolate del pasado. Creo que la tendencia es cada vez más la de volver a los orígenes, no solo del chocolate, sino de cualquier ingrediente. Y es lo que tenemos que buscar.

Cualquier cosa puede ser inspiradora: un viaje, una sensación, un recuerdo del pasado …
¿Cómo explicarías tu pastelería?
Es una pastelería muy cercana al consumidor. Siempre busco democratizar la pastelería de autor para que cada vez lo entienda mejor el público. Igual que en la alta cocina … La labor de los grandes chefs de hoy en día es, de alguna manera, “educar” al gran público que de esta manera se convierte en un consumidor más consciente, exigente y que valora mejor lo que se le ofrece.
